Chefs need guidance and support. They need somebody who understands what they're doing, to help them bring out their best. Before we start promoting them, we make sure we understand them. I believe I know what the public is looking for, and I believe I know what the critics are looking for. They're two different things, and it's important that a menu reflects and cooks for both audiences. Some chefs come in and say, "I want to be a TV superstar."

Dressing Room: A Homegrown Restaurant Located on the grounds of the Westport Country Playhouse, the curtain has risen on a new production from chef Michel Nischan and actor and philanthropist Paul Newman.  Dressing Room: A Homegrown Restaurant, serves updated American heritage cuisine, food that emphasizes excellent regional ingredients and pure flavors, served with genuine, neighborly hospitality in a welcoming setting.  A great team, Nischan, chef, cookbook author and a proponent of healthy, culturally significant food, has found a soul-mate in the like-minded Newman, who is Dressing Room’s self-proclaimed “Director of Opinions” and a longtime advocate of a more healthful, organic and sustainable food future. For their efforts with Dressing Room and related community outreach, Nischan and Newman were named “Persons of the Week” in a recent broadcast of ABC World News Tonight with Charles Gibson.  Dressing Room is currently open for lunch and dinner six days a week (Tuesday – Saturday), and will commence breakfast service in January of 2007.

Gotta have it: Chicken and Dumplings with Missouri-style noodle dumplings, vegetables and herbed poultry broth; Beef Kettle Pot Roast with heirloom potatoes, root vegetables and horseradish garnish; Berkshire Pig parsnip-horseradish puree, mushrooms, fava beans, natural pan juices; and Creamy Ancient Farro – Kinda Like Risotto with fava beans, chanterelle mushrooms and harvest onions.

Japonais Opens in Las Vegas. Renowned restaurateurs and partners in all three Japonais properties, Miae Lim, Rick Wahlstedt and Jeffrey Beers (also the restaurant’s designer) have joined forces with The Mirage to open a Japonais restaurant in one the country’s most thriving culinary cities. Since opening in 2003, Japonais received three stars by both the Chicago Sun Times and Chicago Tribune, and was named “Best Restaurant” by Chicago Magazine in 2005. This July, Japonais opened in New York City’s Gramercy Park neighborhood, offering Manhattanites and travelers a taste of their signature flavor and hospitality. Created entirely for the guest, from the guest’s perspective, Japonais now brings dining as it should be to the already flourishing restaurant landscape of Las Vegas. Accommodating 300 people, the 11,000 square foot space features four distinct dining and lounge areas that provide guests with multiple ways to experience the restaurant. Kava Lounge at Parea. Parea, which was launched to critical acclaim with chef Michael Symon making his New York debut (he owns Lola and Lolita in Cleveland), introduces Kava Lounge (kava means wine cellar in Greek) in their downstairs salon. There, a beautiful 40-seat space (available for private events) features wine barrel banquettes and wine racks along the walls, while red brick columns soar from the tiled floors into the ceiling.  Guests descend to the tasting room’s rouge oasis solely for the purpose of enjoying ouzo and wine pairings, sipping a cocktail, and sharing mezedes. Delicious offerings from the dinner menu are available to guests downstairs, as well.  Pairing suggestions from the ouzo or wine menu, which is 95 percent Greek, will be offered upon request. The lounge is open 7 days a week from 5:30 pm till 4 am.

Seafood Spinialo flight with tuna, wild salmon and scallop. Ouzo selections such as, Barbayianni  Blue  Lesvos,  Aphrodite, and Eyzon. Kobe Club. Preeminent restaurateur Jeffrey Chodorow of China Grill Management and his partner, entertainment executive Charlie Walk recently opened the highly anticipated Kobe Club, a steakhouse designed by LA-based firm Dodd Mitchell Design in association with New Jersey-based architectural firm New World Design Builders. The vibe at Kobe Club is reminiscent of spending time at a private party or a speakeasy dinner club. Guests will notice the 2,000 suspended Samurai swords hanging over the center of the dining space, the polished and edgy “blade” stingray bar in the lounge and columns wrapped in leather bands and leather straps that act as a veil on wall surfaces.

Executive chef Russell Titland collaborated with China Grill Management Corporate Chef Luke Rinaman and Regional Chef Scott Ubert (formerly of ONO and David Burke and Donatella) to create an innovative and flavorful steakhouse menu.  Kobe Club offers the finest, “top grade” cuts of meats, including American, Australian and Japanese Wagyu, as well as American Prime, which can be ordered in “flights” or as surf and turf combinations with a variety of signature seafood dishes.

Quattro Gastronomia Italiana. A Sushi Mecca: Sushi of Gari 46. On October 25, renowned sushi chef Gari (Masatoshi Sugio) opened a long-awaited new location of his acclaimed sushi restaurant. Sushi of Gari 46, located in the theater district, focuses primarily on Gari’s 130 varieties of signature topped sushi creations, in addition to a menu of traditional Japanese dishes as well as new creations from the master chef. The restaurant will also showcase Gari’s signature blended sakes. Hailed by Food & Wine in 2005 as one of America’s sushi masters, Gari “specializes in innovative flavorings that never overshadow the taste of the fish.”  For the past eight years, he has been the creative vision behind the Upper East Side’s Sushi of Gari, a sushi mecca that is small in size, but large in cult following. In January 2005, he also opened Gari, a polished sister location on the Upper West Side serving his transcendent sushi as well as creative appetizers and entrées. After over 35 years as a sushi chef, Gari’s mission remains the same: to compose for his guests the perfect piece of sushi that, according to tradition, should not require any additional soy sauce or wasabi, as it merely upsets the fine-tuned balance of a quality piece of sushi.  Gari’s frequent trips to Japan allow him to strengthen his relationship with the purveyors who provide the highest grade of that country’s numerous varieties of fish.  Designed by Station Design, the sleek new 40-seat location features exposed brick walls and furniture in black and wood tones.  A sushi bar at the rear of the restaurant seats 11 guests, providing the opportunity for them to interact directly with the skilled sushi chefs as they work to create delicacies from Gari’s extensive repertoire based upon the day’s catch.

Gotta have it: Gari's Omakase Sushi (prices begin at $60) - beautiful jewels of sushi composed of slightly warm, perfectly-molded mounds of Gari's specially blended rice topped with creative combinations such as an unctuous piece of salmon topped by a grilled tomato; a fried Kumamoto oyster served with rice in its shell; fatty tuna with a creamy tofu sauce; firm red snapper topped with a baby mesclun salad, toasted pine nuts and crisp lotus root; and a piece of decadent foie gras with daikon and ponzu sauce, to name a few.

Borgata Women in Wine. On Saturday, November 11th, Borgata Hotel Casino & Spa, the East Coast’s leading hotel-casino and dining destination, was the setting for the second annual Women in Wine, a charity tasting event, celebrity chef cook-off and wine education forum celebrating female winemakers from around the country. In partnership with Wine Spectator magazine, the Borgata Heart & Soul Foundation raised $101,500 for Living Beyond Breast Cancer and Atlantic County Women’s Center through ticket sales, and a live and silent auction held that evening.

The second annual Women in Wine event offered attendees the special and rare opportunity to join some of America’s most celebrated chefs and female vintners for an exclusive sampling of mouth-watering dishes and incredible wines, as well as the chance to learn techniques for tasting, selecting and storing wines. Hosted by Emmy-nominated ABC 7 news anchor Lauren Glassberg, the event honored the trailblazing women who now run vineyards, hold the keys to major cellars and are shaping the future of wine. Special guests in attendance included female winemaker and actress Lorraine Bracco of HBO’s “The Sopranos” and Olympic gold medalist Peggy Fleming, also a breast cancer survivor.  

A highlight of the evening included the first-ever cook-off between two of Food Network’s celebrated Iron Chefs from “Iron Chef America” -- Borgata chef Bobby Flay battled Nobu-alumnus Masaharu Morimoto in a “mystery bag cook-off.” After a heated 25-minute competition where the secret ingredients were lobster and Dungeness crab, the judges awarded both chefs ten out of ten possible points and declared a tie.   >> more
